Mint & Coriander Quinoa

This recipe is stimulates your appetite, digestion and metabolism. It contains herbs that cleanse the palate and help burn and eliminate toxins. Mint and onion stimulate the body’s cellular detox activity, cleaning mucus membranes throughout the digestive tract. They promote fluid release from cells, flushing out metabolites, supporting the kidneys and urinary tract in this manner also.

Quinoa is a high protein, gluten free grain that provides easily digestible energy and vitamins to nourish the body, giving energy required to get up and moving.

I cup coloured quinoa

1 cup coriander, chopped

3/4 cup mint, chopped

2 handfuls cherry tomatoes, chopped

1/4 cup small red onion, chopped

1/4 tsp cracked pepper

1 lime, zest and juice

2 tbs Absolute Organic Olive Oil

pinch pink salt

Boil quinoa in 2 cups of water until soft. Drain and rinse. Gently mix in all the other ingredients. Enjoy!
