Kitchari is a complete meal that re-establishes proper digestion by boosting digestive capacity and removing heaviness, and accumulated toxins from the system. It is both nourishing and cleansing, purifying the body and mind.
1 tbs Sacred Cow Ghee
½ tsp of each of cumin, coriander, turmeric, ginger, asafoetida, fennel, arjwan or to keep it simple 1 tsp garam masala
½ cup white basmati rice
½ cup split moong dahl
1 cup chopped vegetables of your choice – pumpkin, sweet
potato, zucchini, cauliflower, broccoli, asparagus, spinach or fennel are very
good.
Melt ghee in pot on low heat, add spices and allow to warm
until fragrant. Add rice and moong dahl and heat through. Add vegies and mix
through, then add 1 1/2 cups of water bring to simmer and cook on low heat for
20 minutes. Serve with fresh coriander.
